Of this fruit from a delicate orchid native to Mexico, legend says that a hummingbird first discovered vanilla and passed its secrets of love to only the most deserving humans. Meaning "little pod" in Spanish, the Aztecs introduced their beloved spice to Cortez in the early 1500's. Today in Mexico, family cocoa recipes based on early Aztec beverages are still in existence. In the wild, the vanilla plant is pollinated by species of hummingbirds and bees found exclusively in tropical America.
